Muesli: Have the sweet without the sugar

By Sharon RusSpecial to the Chronicle

Some of you might be asking, “What is muesli?” It’s an uncooked mixture of nuts, seeds, grains, dried fruits and spices. It's easy to make, store and even bring to class with you for a snack or a quick breakfast. It can be eaten for breakfast in America, but in Switzerland and Germany, it is considered an evening dish. So feel free to make this recipe any time of the day!

If you take a trip on the Blue Beetle down to the store this week, you should easily find all these fresh ingredients for this tasty snack. This recipe will yield about two meal-sized portions or four snack size portions. Here is what you will need: 1 cup rolled oats 1 cup walnuts 1 cup cereal (any kind you want!) 1/4 cup raisins 1 cup vanilla or plain yogurt 1/2 teaspoon cinnamon 1 banana 1 apple

First, smash or chop the nuts into smaller pieces or you could buy them already precut into slivers. I choose walnuts, but you can pick any type of nuts or leave them out altogether. Then, cut the apple into bite-sized bits. Take the dry ingredients – rolled oats, nuts, apple, and raisins – and mix them together in a bowl. Next, combine the yogurt and dry ingredients until they are thoroughly blended. Taste a little to make sure that it is the right consistency. Finally, sprinkle cinnamon on top before you store it in your minifridge. If you don’t have a fridge, then you can eat the muesli straight after you finish preparing it. When you want to serve it, add any fruit and cereal on top. You can substitute most of the ingredients or add some to make this recipe your own.

Not only is muesli simple to make, but it’s also a healthier treat than any store-bought variety because there’s no preservatives or artificial flavors. The nuts provide a great source of protein and omega-3 fatty acids (especially walnuts). If you want something sweet but don’t want to spike your sugar levels, then muesli will satisfy your cravings. There’s no better way to start your school year off right and end a long week of classes.

Are you afraid of running low on your meal plan? Save money and time with this simple muesli recipe. This treat makes a great breakfast, snack, or even light dinner.

Enjoy!
