Dorm Room Dish: An egg-cellent healthy choice

Poor eggs, often accused of being nothing but cholesterol-heavy or – if left out too long – smelly. When in reality they are a college student's dream.

Eggs keep you full longer than any sugary breakfast cereals, and your blood sugar levels will stay stabilized until lunchtime, which means less snacking! The egg white is an excellent source of protein and riboflavin and the yolk contains all the fat and is a good source of protein, iron, vitamins A and D, choline and phosphorus.

Besides the health benefits, they are a delicious delicacy that do not take much skill to make. Eggs can be scrambled, boiled, whipped and fried up into any dish. The options are as unlimited as your imagination, so spice up any meal with an egg.

Do not wait too long because eggs are best when eaten within a week. They can, however, be refrigerated up to a month, providing the shells are intact.

So now that you have a carton of fresh eggs, here are two ideas for how to cook them. Feel free to substitute any of the veggies with your own favorite variety.

Egg-in-a-Basket:

1 slice of bread

1 egg

Salt and pepper

1/2 avocado

1 Handful of spinach

1 tomato

Oil

Cut a circle in the middle of your bread with a knife, cookie cutter or just your hands if you don’t have any tools. (College student life, huh?) Pour a teaspoon or so of oil into your frying pan and place the bread in the center. Wait a minute or so for it to heat up and then crack your egg inside the hole. I suggest moving around the white so it gets done. If you like your egg over easy, flip it over but be careful not to break the yolk. While you wait, toast the piece of bread that you cut out. Finally, add salt and pepper. Once the eggs are on your plate, you can cook up the veggies or just eat them raw.

Fried Egg “Hot Pocket": 

2 large eggs

1 pita pocket

1/2 avocado

Handful of spinach

Tomato (or other veggies)

Oil

Pour some oil in the frying pan and cook and spice the eggs to your liking. Then put them on a separate plate and toast your pita pocket. Next, either fry your veggies or just put them into your pita raw. Finally, finish it off by adding the egg to the pita pocket.

Voila! These recipes are so simple and yet so tasty. If you are in a pinch or you want a whole meal, look no further than the egg aisle. Enjoy!
